Johnny Knuckles Knock-out BBQ literally started as a dream. Craig woke up one morning in 2017 laughing about a dream he had. He told Cindy they had a BBQ food truck called Johnny Knuckles; and so it began. Fortunately they knew something about BBQ. In 1988 they began smoking meats at local festivals with a friend that owned a restaurant.
